- 3 (6 oz.) cans crab meat or 1 lb. fresh
- 4 1/2 slices bread, crusts removed and finely diced
- 1/8 green pepper, finely chopped
- 2 to 3 Tbsp. parsley, finely chopped
- 1 egg
- 1 Tbsp. lemon juice
- 1/4 c. oil
- 5 Tbsp. mayo
- 3/4 tsp. dry mustard
- 1/4 tsp. salt
- 3 drops Tabasco
- 1/4 tsp. Worcestershire
- 1/4 c. butter
Directions

1Beat egg lightly and add mayo, mustard, salt, Tabasco, Worcestershire and lemon juice.

2In another bowl, lightly combine crab meat, bread, green pepper and parsley.

3Pour sauce over crab meat mixture and lightly toss.

4Form into cakes (squeeze extra moisture from cakes) and pan fry to crisp brown in mixture of butter and oil.

5Makes 7 to 8 cakes.
