- 3 Tbsp. butter
- 5 Tbsp. flour
- 1 1/2 c. milk
- 1 Tbsp. salt
- 2 tsp. pepper
- 1 egg, beaten
- dash of celery salt
- 1 tsp. minced onion
- 2 c. cooked crab meat
- mayonnaise
- dry bread crumbs
Directions

1Melt butter; blend in flour.

2Add milk, stirring constantly, until thickened.

3Add salt, pepper, egg, celery salt and onion and continue cooking until very thick.

4Remove spine from crab meat and add to mixture.

5Chill for several hours.

6Form into cakes or cut into steak shape pieces.

7Dip each cake or steak into flour, then spread generously on both sides with mayonnaise and roll in bread crumbs.

8Brown in hot butter.
