Crab Casserole

Ingredients

  • 2 eggs
  • 3 c. milk
  • 2 c. seasoned croutons (or more)
  • 1/2 lb. or 1 c. grated Cheddar cheese
  • 1 Tbsp. grated onion
  • 1 Tbsp. parsley
  • salt and pepper
  • 1 lb. or 2 pkg. imitation crabmeat
  • Parmesan cheese
  • 1 pkg. frozen spinach, thawed and drained

Directions

    Beat eggs.

    Mix in milk, croutons, cheese, onion, parsley, salt and pepper.

    Pour into casserole dish that has been sprayed with nonstick spray.

    Place chunks of crabmeat in casserole and do the same with spinach so that when cut, each person will get some in each square.

    Top with Parmesan.

    Bake at 325° for 1 hour.

    Can use broccoli or asparagus instead of spinach.

    Cut into squares to serve.
