Crab Gumbo

- 1 c. celery chopped
- 2 garlic cloves chopped
- 3 medium onions chopped
- 2 c. flour
- 1 c. bacon dripping or peanut oil
- 2 lb. brown crabmeat or 1 claw and 1 white
- 2 lb. okra chopped
- 2 2 1/2 c. tomatoes chopped
- salt and pepper to taste
- 3 quarts of hot water
Directions

1Brown in flour in oil until golden brown or darker.

2Add chopped vegetables, saute 5 to 10 minutes. Pour vegetables in 6 quart pot, add water; let simmer for 30 minutes.

3Add tomatoes, let simmer for one hour. Then add okra, cook 15 minutes. Add crabmeat, let simmer for 15 more minutes.

4Serve over rice.

5I like to saute my okra in small amount of oil for 10 to 15 minutes the add to gumbo, not sticky.

6For seafood gumbo add 2 pounds of shrimp and one pint of oysters.
