Crab Puffs

Ingredients

  • 1 (6 1/2 oz.) can crab meat, drained and flaked
  • 1/2 c. grated sharp Cheddar cheese
  • 3 green onions, chopped
  • 1 Tbsp. Worcestershire sauce
  • 1 tsp. dry mustard
  • 1 c. water
  • 1/2 c. butter
  • 1 c. flour
  • 4 eggs

Directions

    Mix first five ingredients well and set aside.

    Combine water and butter in a large saucepan and bring to a boil.

    Remove from heat and immediately add flour, beating until mixture forms a ball.

    Add eggs, one at a time, beating thoroughly after each one. Stir in crab mixture.

    Drop by 1/2 teaspoons onto ungreased baking sheet.

    Bake 15 minutes at 400°, then reduce heat to 350° and bake 10 minutes more.

    Unbaked puffs can be frozen on baking sheet and transferred to plastic bags.

    Heat without thawing at 375° until crisp.
