Crab Quiche

Ingredients

  • 1/2 c. mayonnaise
  • 2 Tbsp. flour
  • 2 eggs, beaten
  • 1/2 c. milk
  • 1/2 lb. crab meat, cooked or crabmeat substitute
  • 1/4 lb. Monterey Jack cheese, shredded
  • 1/3 c. green onions, chopped
  • 1 pie shell, prebaked

Directions

    Combine mayonnaise, flour, eggs and milk.

    Mix thoroughly. Stir in crabmeat, cheeses and onion.

    Spoon into a baked pie shell and bake at 350° for 30 to 40 minutes or until firm in center.

    I double the ingredients and bake in a 10-inch pie shell.

    I like mine very full.
