- 2 Tbsp. Parmesan
- 1/2 tsp. paprika
- 3 sheets phyllo dough
- 4 egg whites, beaten
- 1/2 c. nonfat Ricotta
- 2 Tbsp. flour
- 1/2 c. evaporated skim milk
- 8 oz. crabmeat
- 6 oz. low-fat Swiss cheese, grated
- 1/3 c. chopped scallions
- 2 oz. Parmesan cheese
- 1 fresh lemon
Directions

1Preheat oven to 350°.

2Spray a 9-inch pie pan with cooking spray.

3Combine 2 tablespoons Parmesan cheese with paprika and set aside.

4Stack and cut sheets of phyllo dough in half.

5Place one square of phyllo in pie pan. Coat with cooking spray and sprinkle with 1 teaspoon cheese mixture.

6Layer remaining squares and cheese mixture in the same manner.

7Combine egg whites with Ricotta, flour and milk.

8Stir in crabmeat, Swiss cheese and scallions. Sprinkle with Parmesan and a squirt of lemon juice. Bake for 40 to 45 minutes or until lightly browned. Cool for 10 minutes.
