- 1/4 c. butter or margarine
- 1/4 c. all-purpose flour
- 5 c. skim milk
- 1/4 c. sliced scallions
- 1/4 c. chopped celery
- 6 drops hot pepper sauce
- 16 oz. flaked imitation or fresh crab meat
Directions

1Melt butter in a large saucepan.

2Add celery and cook 3 minutes, stirring often, until crisp-tender.

3Add flour and stir over low heat until frothy.

4Cook about 3 minutes, stirring often to prevent browning.

5Add hot pepper sauce.

6Gradually stir in milk.

7Increase heat to medium and bring to a boil.

8Immediately reduce heat so milk simmers.

9Add crab meat, return to a simmer and cook about 3 minutes until crab is hot.

10Stir in scallions. Makes 4 servings.
