- 8 each sole fillets
- 1 pound crab meat
- 5 tablespoons chives minced
- 5 tablespoons parsley leaves minced
- 5 tablespoons butter melted
- 1/4 cup celery chopped
- 1/2 cup cream
- 1/2 teaspoon salt
- 3 tablespoons butter
- 3 tablespoons flour, all-purpose
- 1/4 teaspoon salt
- 1 1/2 cups milk
- 1 cup swiss cheese grated
Directions

1Preheat oven to 400F (200C).

2Combine filling ingredients and spread over fillets.

3Roll each fillet into a tube shape and place seam-side down baking dish To make sauce, melt butter saucepan, then blend in flour and salt.

4Simmer for two minutes.

5Stir in milk and wine, and simmer until mixture thickens, stirring constantly.

6Pour sauce over fillets and bake at 400F (200C).
