- 32 saltine crackers
- 2 c. sugar
- 1 1/2 tsp. baking powder
- 2 c. pecans
- 6 egg whites
- 1 tsp. cream of tartar
- 1 (8 oz.) carton Cool Whip
- 1 (8 oz.) can crushed pineapple, drained
Directions

1Crush crackers very fine; add 1 cup sugar, baking powder and pecans.

2Beat egg whites until soft peaks form.

3Add cream of tartar and add rest of sugar; beat until stiff.

4Fold the dry ingredients in egg whites.

5Pour into well-greased pan.

6Bake at 350° for 25 minutes or golden brown.

7Remove cake after cooling, chill.

8Frost with Cool Whip.

9Spread top with pineapple, then cover with coconut and candied cherries.
