- 1 medium red pepper, cut into strips
- 1 small onion, sliced
- 1 small zucchini, sliced
- 1/2 tsp. dried oregano leaves
- 1 Tbsp. Fleischmann's margarine
- 32 Premium crackers
- 4 oz. reduced-fat Cheddar cheese, shredded (1 c.)
- 2 c. skim milk
- 1 c. Egg Beaters 99% egg product
Directions

1In a large skillet over medium heat, cook and stir red pepper, onion, zucchini and oregano in margarine until tender.

2In lightly greased 9 x 9 x 2-inch baking pan, layer half each of the crackers, vegetable mixture and cheese.

3Repeat layers, ending with cheese.
