  • 1 medium red pepper, cut into strips
  • 1 small onion, sliced
  • 1 small zucchini, sliced
  • 1/2 tsp. dried oregano leaves
  • 1 Tbsp. Fleischmann's margarine
  • 32 Premium crackers
  • 4 oz. reduced-fat Cheddar cheese, shredded (1 c.)
  • 2 c. skim milk
  • 1 c. Egg Beaters 99% egg product

Directions

    In a large skillet over medium heat, cook and stir red pepper, onion, zucchini and oregano in margarine until tender.

    In lightly greased 9 x 9 x 2-inch baking pan, layer half each of the crackers, vegetable mixture and cheese.

    Repeat layers, ending with cheese.
