  • 3 eggs
  • 1/2 tsp. baking powder
  • 1 c. crackers, crushed (Ritz crackers)
  • 1 tsp. vanilla
  • 1 c. chopped pecans
  • 1 c. sugar
  • 1/2 tsp. baking powder

Directions

    Beat egg whites until very stiff.

    Add slowly sugar and baking powder.

    Crush 21 crackers (about 1 cup).

    Add pecans to the crackers.

    Fold this into egg white mixture and add vanilla. Grease a deep pie plate.

    Fill and bake for 30 minutes at 350°. Refrigerate overnight.

    Top with whipped cream.

    Use Ritz crackers.
