- 1 qt. milk
- 2 eggs
- 1/2 c. sugar
- 3 Tbsp. cornstarch
- 1 c. saltine crackers, crushed
- 1/2 c. coconut (optional)
- 1 tsp. vanilla
- 4 Tbsp. sugar
Directions

1Heat milk until very hot.

2Mix 2 egg yolks, 1/2 cup sugar and cornstarch.

3Stir together until a smooth paste forms.

4Add the paste mixture to the hot milk and cook well.

5Add crushed saltine crackers, coconut (if desired) and vanilla.

6Stir well.

7Put mixture into 1-quart baking dish.

8Beat 2 egg whites and 4 tablespoons sugar until stiff peaks form.

9Put on top of custard and bake in 400° oven until light brown.
