Cracklin Cornbread

- 1 cup all-purpose flour
- 1 cup yellow cornmeal
- 1 teaspoon salt
- 1 egg, beaten
- 1 cup milk
- 1 cup chopped crisp pork cracklins (see page 60) or crumbled crisp bacon
Directions

1Preheat the oven to 425 F.

2In a large mixing bowl, sift the flour, cornmeal, and salt together until thoroughly combined.

3Add the egg and the milk, and mix until the batter is relatively smooth.

4Add the pork cracklins.

5If the mixture seems too dry, add a tablespoon or two of water to moisten it.

6Pour the batter into an 8-inch cast-iron skillet or an 8-inch square baking pan.

7Bake until the top is golden brown and a tester inserted into the middle of the cornbread comes out clean, 20 to 25 minutes.

8Remove the cornbread from the oven and allow it to cool in the pan for 10 minutes before cutting and serving.
