Cracklin Cornbread

  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • 1 teaspoon salt
  • 1 egg, beaten
  • 1 cup milk
  • 1 cup chopped crisp pork cracklins (see page 60) or crumbled crisp bacon

    Preheat the oven to 425 F.

    In a large mixing bowl, sift the flour, cornmeal, and salt together until thoroughly combined.

    Add the egg and the milk, and mix until the batter is relatively smooth.

    Add the pork cracklins.

    If the mixture seems too dry, add a tablespoon or two of water to moisten it.

    Pour the batter into an 8-inch cast-iron skillet or an 8-inch square baking pan.

    Bake until the top is golden brown and a tester inserted into the middle of the cornbread comes out clean, 20 to 25 minutes.

    Remove the cornbread from the oven and allow it to cool in the pan for 10 minutes before cutting and serving.
