- Butter, for greasing the pan
- 1 cup stone-ground cornmeal
- 1 cup unbleached all-purpose flour
- 1/3 cup sugar
- 2 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup buttermilk
- 1 cup diced, crisp-cooked bacon
- 6 tablespoons ( 3/4 stick) unsalted butter, melted
- 1 egg, lightly beaten
Directions

1Preheat the oven to 400F.

2Grease a 9-inch square baking pan.

3Stir the dry ingredients together in a bowl.

4Then stir in the buttermilk, bacon, melted butter, and egg and mix gently.

5Pour the batter into the prepared pan, set on the center rack of the oven, and bake for 25 minutes.

6The corn bread is done when the edges are lightly browned and a knife inserted in the center comes out clean.

7Cut into 3-inch squares to serve.

8Variation: Spoon the batter into 10 greased muffin cups and bake for about 20 minutes.
