- 1 1/2 c. self-rising white corn meal
- 2 Tbsp. flour
- 1/2 tsp. salt
- 1 egg
- 1/2 tsp. baking soda
- 1 c. buttermilk
- 1/2 c. plain milk
- 2 Tbsp. bacon drippings or shortening
- 4 Tbsp. cracklings, finely ground
Directions

1Preheat oven to 425°.

2Melt drippings in shallow baking pan. While drippings melt, beat egg, then add dry ingredients.

3Mix well with milks and add cracklings.

4Add excess drippings to other ingredients and stir well.

5Pour into pan and bake for 20 to 25 minutes or until golden brown.
