- 2 c. cornmeal
- 1 tsp. salt
- 1 c. cracklings
- 1 c. warm water (or enough to make soft dough)
- 1 Tbsp. oil
Directions

1Mix all the ingredients except the oil in a bowl.

2Heat the oil in a cast-iron skillet over medium heat.

3Pour the batter into the skillet, reducing the heat to low.

4Let cook for 12 to 15 minutes, until brown.

5Place a plate over the skillet and turn the skillet over to release the bread.

6Return the bread to the skillet to cook the other side over low heat for 15 minutes more until well browned.

7Or, the bread can be baked for about 35 minutes in the oven at 375° instead.

8Cut in wedges to serve. Serves 6 to 8.
