Ingredients

  • 2 c. flour
  • 1 c. sugar
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 tsp. salt
  • 2 Tbsp. melted shortening
  • about 2 Tbsp. boiling water
  • 1 egg well beaten
  • 1/2 c. chopped nuts-optional
  • 1 1/2 c. chopped cranberries (measure before chopping)
  • juice and rind from 1 orange

    Sift dry ingredients together.

    Pour orange juice into a measuring cup add rind and melted shortening and enough water to make 3/4 of a cup.

    Combine orange juice mixture and beaten egg.

    Stir liquid into dry ingredients just until moistened.

    Fold in cranberries and nuts and pour into a greased loaf pan.

    Let stand for 20 minutes before baking.
