- 2 c. flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1/4 c. butter
- 1 1/4 c. sugar
- 1 tsp. grated orange rind
- 1 large egg
- 3/4 c. orange juice
- 2 c. cranberries
- 1/2 c. chopped walnuts
Directions

1Line the bottom of a loaf pan with wax paper and butter it. Sift flour, baking powder, salt and cinnamon.

2In a large bowl, cream the butter, sugar and orange rind.

3Beat in egg until blended.

4Add flour mixture in 3 additions, alternating with orange juice, mixing each time.

5Fold in cranberries and walnuts. Turn into loaf pan.

6Bake in preheated oven at 350° until cake tester comes out clean, about 55 minutes.

7Cool on wire rack. Wrap and store for flavors to blend.
