- 2 c. whole wheat flour
- 2 c. white flour
- 2 Tbsp. baking powder
- 1 tsp. salt
- 1/2 tsp. cinnamon
- 1 tsp. soda
- 1/4 tsp. nutmeg
- 2 Tbsp. grated orange rind
- 1 c. brown sugar
- 1 c. white sugar
- 1/2 c. butter
- 1 1/2 c. orange juice
- 2 eggs
- 1 c. nuts
- 2 c. fresh cranberries
- 2 Tbsp. rum extract
Directions

1Sift dry ingredients together; cut in butter.

2Combine orange rind, orange juice and eggs.

3Add to dry ingredients, mixing just to moisten.

4Fold in coarsely chopped cranberries, nuts and vanilla.

5Turn into 2 greased and floured 9 x 5-inch loaf pans. Bake at 350° for 55 to 60 minutes (or until done).

6Slices best the next day.
