  • 2 c. whole wheat flour
  • 2 c. white flour
  • 2 Tbsp. baking powder
  • 1 tsp. salt
  • 1/2 tsp. cinnamon
  • 1 tsp. soda
  • 1/4 tsp. nutmeg
  • 2 Tbsp. grated orange rind
  • 1 c. brown sugar
  • 1 c. white sugar
  • 1/2 c. butter
  • 1 1/2 c. orange juice
  • 2 eggs
  • 1 c. nuts
  • 2 c. fresh cranberries
  • 2 Tbsp. rum extract

    Sift dry ingredients together; cut in butter.

    Combine orange rind, orange juice and eggs.

    Add to dry ingredients, mixing just to moisten.

    Fold in coarsely chopped cranberries, nuts and vanilla.

    Turn into 2 greased and floured 9 x 5-inch loaf pans. Bake at 350° for 55 to 60 minutes (or until done).
