  • 2 c. flour
  • 1/2 tsp. salt
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. soda
  • 1 c. sugar
  • 1 beaten egg
  • 2 Tbsp. melted butter
  • 2 Tbsp. hot water
  • 1/2 c. orange juice
  • 1/4 c. grated orange rind
  • 1 1/2 c. whole cranberries
  • 1 c. chopped walnuts

    Sift the first 5 ingredients.

    Combine the egg, melted butter, hot water, orange juice and orange rind.

    Add to dry ingredients; stir until moistened.

    Add the whole cranberries and chopped walnuts.

    Bake for 1 hour and 10 minutes at 325° in 2 well-greased 1-pound loaf pans or one 2-pound loaf pan.

    Chill, wrap and refrigerate or freeze.
