Ingredients
- 2 c. flour
- 1 c. sugar
- 1 1/2 tsp. baking powder
- 1/2 tsp. soda
- 1/4 tsp. salt
- 2 tsp. grated orange peel
- 2 Tbsp. shortening
- juice from 1 orange
- 1 1/2 c. shredded low-fat Cheddar cheese (about 6 oz.)
- 1 egg or egg substitute
- 1 c. cranberries, halved
- 1/2 c. finely chopped walnuts
Directions

1Heat oven to 350°.

2Grease loaf pan, 9 x 5 x 3-inch.

3Measure flour, sugar, baking powder, soda, salt and peel into bowl.

4Cut in shortening.

5Add water to juice to measure 3/4 cup; mix in with cheese and egg.

6Stir in cranberries and nuts.

7Pour into pan. Bake 60 to 70 minutes or until wooden pick inserted in center comes out clean.

8Remove from pan; let loaf stand at least 8 hours.

9Makes 18 slices.
