Cranberry Chicken

  • 4 pieces Chicken Breast
  • 1 can (16 Oz. Size) Whole Cranberry Sauce
  • 1/2 cups Raspberry Vinaigrette Or Trader Joe's Raspberry And Gorgonzola Salad Dressing
  • 1/2 cups Crumbled Gorgonzola Plus Extra For Garnish
  • 1/2 cups Candied Walnuts

Directions

    In a mixing bowl, mix the cranberries, the salad dressing and some Gorgonzola (if you love it like me) until its all nice and creamy.

    Place the chicken in a casserole dish and pour the cranberry mixture on top.

    Sprinkle with candied walnuts.

    Bake in the oven at 35oF for 45 minutes or so, until the chicken is no longer pink.

    About 5 minutes before its done, you can sprinkle more cheese on top to let it melt a bit.

    Adjust the amounts until you find something you like, and this is easily doubled for more people.
