  • 1 12 cups cranberries
  • 1 cup sugar, divided
  • 1 teaspoon orange zest
  • 1 12 cups flour
  • 2 teaspoons baking powder
  • 12 teaspoon salt
  • 1 egg
  • 14 cup orange juice
  • 14 cup milk
  • 3 tablespoons butter, softened
  • 14-12 cup chopped pecans

Directions

    Arrange cranberries in a greased 8 inch baking pan; sprinkle with 1/2 cup sugar and the orange zest.

    Mix remaining ingredients until just moistened; drop by spoonfuls onto cranberries, spreading batter to the sides of the pan.

    Bake coffee cake at 400* until wooden pick inserted in center comes out clean, 25-30 minutes.

    Immediately invert coffee cake onto serving plate.
