  • 1 14 cups all-purpose flour
  • 34 cup cornmeal
  • 13 cup sugar
  • 2 teaspoons baking powder
  • 12 teaspoon salt
  • 2 eggs
  • 34 cup milk
  • 14 cup vegetable oil
  • 1 cup chopped fresh cranberries or 1 cup frozen cranberries
  • 2 tablespoons sugar

Directions

    Preheat oven to 400; grease bottom and sides of 8-inch square pan with shortening or cooking spray.

    In a bowl, combine flour, cornmeal, 1/3 cup sugar, baking powder, and salt.

    Add in eggs, milk, and oil; beat with a spoon until mixed.

    In a small bowl, toss cranberries with 2 T sugar until coated; fold into batter.

    Transfer batter to pan; smooth top.

    Bake 25-30 minutes or until pick comes out clean; serve warm.
