Cranberry Nut Bread

- 1/3 c. butter
- 1 c. sugar
- 2 eggs
- 3 c. flour
- 2 tsp. baking soda
- 1/4 tsp. salt
- 1 c. orange juice
- 1 1/2 c. cranberries, coarsely chopped
- 1/2 c. chopped nuts
- 2 tsp. grated orange peel
Directions

1Heat oven to 350°.

2Beat spread and sugar until light and fluffy.

3Add eggs one at a time, mixing well after each addition. Add dry ingredients with juice, mixing well after each addition. Stir in cranberries, nuts and peel.

4Pour in greased and floured 9 x 5-inch loaf pan.

5Bake 1 hour and 10 minutes.

6Cool 10 minutes. Remove from pan.

7Cool completely on wire rack.

8Makes 1 loaf.
