Ingredients
- 1 c. whole-wheat flour
- 1 c. white flour
- 1/4 c. sugar
- 1 Tbsp. baking powder
- 2 tsp. grated orange rind
- 1 c. orange juice
- 2 Tbsp. vegetable oil
- 1 egg
- 1 c. chopped fresh or frozen cranberries
- 1/3 c. raisins
- 1/3 c. chopped walnuts
Directions

1Combine the flours, sugar, baking powder and orange rind in a mixing bowl.

2Add the remaining ingredients and stir until well blended.

3Pour into an oiled 9 x 5-inch loaf pan.

4Bake in a 350° oven for 45 to 50 minutes.

5Cool for 5 to 7 minutes before removing from pan.

6Turn onto a wire rack and cool thoroughly.

7Store in a plastic bag or aluminum foil for at least 1 day before slicing. Serves 15.
