- 4 c. sifted flour
- 1 c. sugar
- 3 tsp. baking powder
- 2 tsp. salt
- 1 tsp. baking soda
- 1/2 c. margarine
- 2 eggs, beaten
- 2 tsp. grated orange peel
- 1 1/2 c. orange juice
- 3 c. chopped cranberries (12 oz. bag)
- 1 c. chopped walnuts
Directions

1Mix flour, sugar, baking powder, salt and baking soda into large bowl.

2Cut in margarine until crumbly.

3Add eggs, orange peel and orange juice all at once; stir until evenly moist.

4Fold in cranberries and walnuts.

5Spray pans with nonstick cooking spray. Bake at 350° for 1 hour and 10 minutes.

6Mini loaf pans take about 25 to 30 minutes (bake 4, then 3).

7Two pans take 1 hour and 10 minutes.
