Cranberry-Orange Bread

  • 2 c. sifted flour (all-purpose)
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • grated rind and juice of orange (to make 3/4 c.)
  • 1/2 tsp. salt
  • 1 c. sugar
  • 2 Tbsp. oil
  • 1 egg, beaten
  • 1 c. raw cranberries, chopped
  • 1/2 c. nuts, chopped

Directions

    Sift together the flour, baking powder, baking soda, salt and sugar.

    Add oil, orange juice with rind and beaten egg.

    Mix thoroughly.

    Fold in cranberries and nuts.

    Pour into greased loaf pan or paper-lined muffin pan.

    Bake at 350° for about 1 hour or until toothpick stuck in center comes out clean.
