  • 1 3/4 c. flour (unsifted)
  • 1 c. sugar
  • 3/4 tsp. salt
  • 1 egg, slightly beaten
  • 2 Tbsp. melted butter, margarine or salad oil
  • 3 tsp. baking powder
  • 1/2 tsp. cinnamon
  • 1 tsp. grated orange peel
  • 3/4 c. milk
  • 1 c. raw cranberries, chopped

Directions

    Combine flour with sugar, baking powder, salt and cinnamon; sift into bowl.

    Combine the egg with orange peel, milk and butter or oil; pour all at once into the dry ingredients.

    Mix just until thoroughly moistened.

    Stir in cranberries.

    Spoon mixture into a well greased loaf pan.

    Bake in a 325° oven until bread is brown and tests done with a toothpick, about 1 hour.

    Serve warm or cold. To reheat, wrap in foil.
