Cranberry Quick Bread(Makes 1 Loaf)

- 1 3/4 c. flour (unsifted)
- 1 c. sugar
- 3/4 tsp. salt
- 1 egg, slightly beaten
- 2 Tbsp. melted butter, margarine or salad oil
- 3 tsp. baking powder
- 1/2 tsp. cinnamon
- 1 tsp. grated orange peel
- 3/4 c. milk
- 1 c. raw cranberries, chopped
Directions

1Combine flour with sugar, baking powder, salt and cinnamon; sift into bowl.

2Combine the egg with orange peel, milk and butter or oil; pour all at once into the dry ingredients.

3Mix just until thoroughly moistened.

4Stir in cranberries.

5Spoon mixture into a well greased loaf pan.

6Bake in a 325° oven until bread is brown and tests done with a toothpick, about 1 hour.

7Serve warm or cold. To reheat, wrap in foil.
