Cranberry & Walnut Cake

  • 250 grams Flour
  • 150 grams Caster Sugar
  • 2 teaspoons Baking Powder
  • 1/2 teaspoons Bicarbonate Of Soda
  • 200 grams Dried Cranberries
  • 100 grams Chopped Walnuts
  • 1 whole Egg
  • 200 milliliters Tropical Fruit Juice

Directions

    Preheat oven to 180°C (355°F). Grease a 9x5 inch loaf tin.

    In a bowl, mix flour, sugar, baking powder and bicarbonate of soda. Stir in cranberries and walnuts.

    In another bowl, whisk together egg and tropical juice. Pour into the flour mixture and stir until blended together.

    Pour mixture into the loaf tin. Bake until an inserted skewer comes out clean, about 50 minutes. Allow to cool in the tin for 15 minutes and then place on a wire rack to cool completely.
