Ingredients
- 1 pkg. yellow rice (1/2 box)
- 1 lb. crawfish tails
- 1 stick margarine
- 1 chopped bell pepper
- 1 can cream of mushroom soup
- 8 oz. grated cheese
- 1 can Ro-Tel tomatoes
- 1 chopped onion
Directions

1Saute celery, bell pepper and onion in margarine.

2Combine with tomatoes and steam on low fire.

3Mix in soup.

4Cook rice according to directions.

5Mix rice with tomato-soup mixture.

6Add grated cheese and crawfish.

7Bake at 350° about 40 minutes or until bubbling.

8Don't stir.

9Enjoy with salad and French bread. Serves 8.
