Crawfish Casserole

Ingredients

  • 1 block butter
  • 2 c. onions
  • 1 c. bell pepper
  • 1 lb. crawfish tails, chopped
  • 1 (10 oz.) can Ro-Tel tomatoes
  • 2 pods garlic
  • 1/2 c. chopped celery
  • 1 can cream of mushroom soup
  • 1/2 c. water
  • 1 c. raw rice, cooked to equal 3 c.

Directions

    Saute butter, onions, bell pepper, garlic and celery.

    Add 1 pound crawfish tails and tomatoes.

    Simmer 5 minutes and stir. Add mushroom soup and water.

    Cook five minutes.

    Stir.

    Add 3 cups of cooked rice.

    Pour into a greased baking dish.

    Bake at 400° for 30 minutes.
