Crawfish Casserole

- 1 block butter
- 2 c. onions
- 1 c. bell pepper
- 1 lb. crawfish tails, chopped
- 1 (10 oz.) can Ro-Tel tomatoes
- 2 pods garlic
- 1/2 c. chopped celery
- 1 can cream of mushroom soup
- 1/2 c. water
- 1 c. raw rice, cooked to equal 3 c.
Directions

1Saute butter, onions, bell pepper, garlic and celery.

2Add 1 pound crawfish tails and tomatoes.

3Simmer 5 minutes and stir. Add mushroom soup and water.

4Cook five minutes.

5Stir.

6Add 3 cups of cooked rice.

7Pour into a greased baking dish.

8Bake at 400° for 30 minutes.
