Crawfish Casserole

Ingredients

  • 1 c. chopped onions
  • 1/2 c. chopped celery
  • 1/2 c. oleo
  • 1/2 c. bell pepper
  • 1 can Cheddar cheese soup
  • 1 can cream of mushroom soup
  • 1 (3 oz.) jar pimento
  • 1 lb. crawfish
  • salt and pepper to taste
  • 1/2 c. green onions and tops
  • 1/4 c. parsley
  • 2 1/2 c. cooked rice
  • Italian bread crumbs

Directions

    Saute onions, celery and peppers in oleo until transparent. Add soups, pimento and crawfish; simmer 10 to 13 minutes.

    Add salt, pepper, green onions, parsley and cooked rice.

    Stir well. Place in a 12-inch dish.

    Top with bread crumbs.

    Bake for 30 minutes at 350°.
