Ingredients
- 2 c. yellow corn meal
- 3 eggs
- 1 can cream-style corn
- 1 1/2 c. grated Cheddar cheese
- 3 tsp. baking powder
- 2 jalapeno peppers, finely chopped
- 1 tsp. salt
- 1/2 c. bell pepper, chopped
- 1/2 tsp. soda
- 1 onion, minced
- 1/2 c. cooking oil
- 3/4 c. chopped green onions
- 1 c. milk
- 1 lb. crawfish tails
Directions

1Saute onions and bell pepper in small amount of butter until onions are transparent.

2Add jalapeno peppers.

3Set aside.

4Mix all other ingredients except crawfish.

5Add cooked onions and peppers.

6Stir in crawfish.

7Pour into lightly greased pan.

8Bake in preheated oven at 400° for 35 to 45 minutes.

9Excellent with green salad and fruit platter.
