Crawfish Cornbread

  • 2 eggs
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 1 medium onion, chopped
  • 1/4 to 1/2 c. sliced jalapenos (according to taste)
  • 1/2 c. cooking oil
  • 1 c. yellow cornmeal
  • 1 c. shredded Cheddar cheese
  • 1 large can cream-style corn
  • 1 lb. crawfish tails

Directions

    Mix all ingredients together in a large mixing bowl and then pour into a greased casserole dish.

    Bake at 375° for 30 minutes. Allow to cool slightly before cutting into squares for serving. Serves 6 to 8.
