Crawfish Etouffee

  • 2 lb. peeled crawfish
  • 1 can cream of mushroom soup
  • 1 can Ro-Tel tomatoes
  • 1 large onion, chopped
  • 1/2 c. celery, chopped
  • 1/2 c. bell pepper, chopped
  • 6 pods garlic
  • 1 block margarine

Directions

    Saute vegetables until clear.

    Add Ro-Tel tomatoes and cook for 15 minutes.

    Add cream of mushroom soup and 1/2 can of water; cook about 20 minutes.

    Add crawfish and cook 20 to 25 minutes. Add your favorite seasonings.

    Add onion tops and parsley as desired.

    Serve over rice.
