Crawfish Pot Pie

- 1 1/2 lb. crawfish tails
- 1 onion, chopped
- 4 to 5 potatoes, diced
- 1 (16 oz.) pkg. mixed vegetables
- 1 pkg. Pioneer chicken gravy mix
- 2 (9-inch) pie shells
Directions

1Cook vegetables according to package directions; drain.

2Boil potatoes until tender.

3Saute onion in a little butter.

4Prepare gravy mix according to package.

5Mix crawfish, potatoes, vegetables and onions together with gravy.

6Pour into unbaked pie shell.

7Cover top with second pie crust.

8Cut a few slits in top of crust.

9Flute edges.

10Bake at 350° for 30 to 45 minutes or until golden brown.

11Let sit for 5 minutes.
