Crawfish Stuffed Bell Pepper

- 1 to 2 lb. crawfish tails
- 1 large onion
- 1/2 bell pepper
- 4 to 6 bell peppers
- 3 cloves garlic
- 3 Tbsp. parsley, chopped
- 2 c. bread crumbs, seasoned
- 2 to 3 eggs
- salt and pepper to taste
- 3 slices stale bread
Directions

1In food processor, grind crawfish tails, onion, 1/2 bell pepper, garlic and stale bread.

2Mix together in large bowl and add eggs, parsley, salt and pepper and bread crumbs.

3Mix together well.

4Clean and hull about 4 to 6 bell peppers, then parboil. Then stuff crawfish mixture in bell pepper.

5Top with a little bread crumbs and dot with a little margarine.

6Bake in 375° oven for about 25 to 35 minutes.
