Crawfish Tortellini

  • 1 lb. crawfish tails
  • 1 (7 oz.) pkg. tortellini with Parmesan cheese
  • 1 stick butter
  • 1 medium onion, finely chopped
  • 2 toes garlic, minced
  • 1/2 c. Parmesan cheese, grated
  • 1 pt. whipping cream
  • 1/8 c. fresh parsley, chopped
  • 2 tsp. cornstarch with water

Directions

    Saute onion and garlic in butter.

    Add crawfish (slightly rinsed) and continue cooking approximately 5 minutes.

    Add Parmesan cheese, parsley and whipping cream.

    Prepare tortellini as directed.

    Fold in with sauce and season with salt and red pepper.

    If sauce needs thickening, mix cornstarch with water and add to sauce.
