  • 2 eggs
  • 1 c. milk, soured with 1 Tbsp. lemon juice
  • 3/4 c. unsifted cocoa
  • 1 c. butter, softened to room temperature (no substitutes)
  • 2 tsp. baking soda
  • 1 1/2 tsp. vanilla
  • 1/4 tsp. salt
  • 3 c. sifted cake flour (not self-rising)
  • 1 c. strong coffee, boiling hot

    Preheat oven to 325°.

    Grease well and flour 2 (9-inch) round pans.

    Add ingredients, without mixing, to a large bowl in the order listed.

    Beat one minute with an electric mixer at moderate speed or 3 minutes by hand.

    Pour into pans and bake for 40 to 45 minutes, until the cakes shrink slightly from sides of pans and are springy to the touch.
