- 3.5 oz cream cheese, softened
- 3 1/2 tbsp butter, softened
- 1/2 cup granulated sugar
- 2 tbsp honey
- 2 tsp orange zest
- 2 None large eggs
- 4 oz coarsely grated carrot
- 6 oz chopped mixed candied fruit
- 3/4 cup all-purpose flour, sifted
- 3/4 cup self-rising flour, sifted
- 1/3 cup orange juice
Directions

1Preheat oven to 350°F. Grease a deep 8 inch ring pan.

2Beat cream cheese, butter, sugar, honey and orange zest until light and fluffy. Beat in eggs, 1 at a time. Stir in carrot, candied fruit, flour and orange juice. Transfer to prepared pan and bake for 50 mins. Let cool for 15 mins then transfer to a wire rack to cool completely.
