Ingredients
- 1 c. (scant) granulated sugar
- 1 (3 oz.) pkg. cream cheese at room temperature
- 1 tsp. mint extract
- 1/2 tsp. food coloring
- 3 c. powdered sugar
Directions

1Line a baking sheet with waxed paper; set aside.

2Pour sugar in small bowl and set aside.

3In another small bowl, combine cream cheese, extract and food coloring.

4Stir with wooden spoon. Gradually add powdered sugar and stir until well blended.

5Mixture will become quite stiff and may require kneading as one would for dough.

6When well mixed, form into balls about 1-inch in diameter. Roll in granulated sugar.

7Place on baking sheet and press flat with the tines of a fork.

8Refrigerate until ready to serve. Makes 1 1/2 pounds.
