Cream Pie (With Variations)

- 1 baked 9-inch pie shell
- 2 T margarine
- 1/3 c sugar
- 1/2 t vanilla
- 2/3 c sugar
- 3 eggs whites
- 1/4 t salt
- 1/2 t cream of tartar
- 2 c milk
- 6 T sugar
- 3 egg yolks, slightly beaten
Directions

1Mix flour, 2/3 c sugar and salt; gradually add milk.

2Cook over low heat until thick, stirring constantly.

3Add small amount of hot mixture to egg yolks; stir into remaining hot mixture. Cook 2 minutes. Add margarine and vanilla.

4Cool.

5Pour into pie shell. Spread with meringue made by beating egg whites and cream of tarter until stiff, then beating in 6 T sugar, 1 T at a time. Bake in a 350 F oven 12-15 minutes.
