- 1 c. water
- 1/2 c. shortening
- 1/2 tsp. salt
- 1 c. flour
- 4 eggs
Directions

1Preheat oven to 400°.

2Heat water, shortening and salt to boiling point.

3Add flour all at once.

4Stir vigorously until mixture leaves sides of pan and clings to the spoon.

5Remove from heat.

6Cool slightly, then add unbeaten eggs, one at a time, beating well after each egg.

7Drop mixture by spoonfuls onto greased baking sheet 1 1/2-inches apart.

8Bake at 400° for 35 minutes.

9Turn off heat and leave puffs in oven until they are dry (about 20 minutes).

10Makes about 16 medium puffs.

11Cut puffs open and fill with pudding.
