- 1 lb. frozen spinach
- 1 medium onion
- 1 clove garlic
- 3 slices bacon, chopped fine
- 1/2 tsp. Lawry's salt
- 1/4 tsp. white pepper
- 3 Tbsp. butter
- 2 Tbsp. flour
- 1 1/2 c. milk
Directions

1Saute the onion, garlic, bacon and condiments in butter.

2Add flour and cook until a smooth roux is created.

3Gradually add milk and cook for several minutes to the consistency of a medium cream sauce.

4Chop the spinach very fine.

5Then squeeze all the juice from spinach.

6Add spinach to sauce; bring to a slow boil and cook 5 minutes.

7Serves 4 to 6.
