Creamed Beans with Mint

Ingredients
- shelled fava beans 2 2/3 cups (400g)
- heavy cream 1 cup (250ml)
- a knifepoint of ground nutmeg
- a handful of parsley leaves, chopped
- mint the leaves from 3 or 4 sprigs, chopped
Directions

1Boil the beans in deep, very lightly salted water.

2When they are tender, drain them and put them back into the pan.

3Pop them out of their skins, if you like.

4Pour in the cream, add a little salt, some black pepper, and the nutmeg, perhaps, then fold in the chopped parsley and mint.

5I tend to keep it quite fine for this dish.

6If you are using savory, introduce it now.

7Bring the mixture to a quiet simmer, then spoon it alongside your ham, halibut, or whatever.
