- 1/3 c. butter
- 1/3 c. flour
- 1 pt. milk
- 1 onion
- sprig of parsley
- 1/2 tsp. thyme
- 1/8 to 1/4 tsp. grated nutmeg
- 1 egg yolk
- 1 lb. halibut
- salt
- lemon juice
- buttered bread crumbs
- grated Parmesan cheese
Directions

1Scald milk.

2Put onion, parsley and thyme in a cheesecloth and cook slowly in the milk one hour or more.

3Remove seasoning.

4Melt the butter.

5Add the flour and brown for a few minutes.

6Add the milk to the butter and flour with a bit of salt and the nutmeg and egg yolk.

7Cook the halibut with salt and lemon juice.

8Flake when done.

9Layer some sauce in the bottom of a baking dish, then a layer of fish.

10Season lightly with salt and pepper, then add more sauce and fish and sauce again.

11Sprinkle top with buttered bread crumbs and cover with Parmesan cheese.
