Creamed Sherry Spinach

Ingredients

  • 1 (12 oz.) pkg. frozen chopped spinach
  • 1/4 c. butter or margarine
  • 1/4 c. flour
  • 1 can cream of mushroom soup
  • 1/4 c. sherry
  • 1/2 c. grated Cheddar cheese
  • 1/2 c. bread crumbs, firmly packed
  • 3 eggs, slightly beaten
  • 1 tsp. onion, grated
  • 1/4 tsp. nutmeg
  • salt and pepper

Directions

    Cook spinach according to package directions, drain well.

    Melt butter, stir in flour, add soup and wine.

    Cook, stirring, until mixture boils and thickens.

    Add cheese; stir over low heat until melted.

    Remove from heat.

    Add spinach and other ingredients. Turn into well-greased casserole or custard cups.

    Set in shallow pan of hot water.

    Bake in 350° oven about 45 minutes or until firm.

    Remove from oven; let stand 5 minutes or so before serving. Serves 6 to 8.
