- 2 teaspoons olive oil, extra-virgin
- 1/4 cup shallots minced
- 1 clove garlic minced
- 1 large spinach stems removed
- 1 tablespoon butter
- 1 tablespoon flour, all-purpose
- 1/2 cup milk, low-fat
- 18 teaspoon nutmeg
- 18 teaspoon salt
- 18 teaspoon black pepper
- 2 tablespoons parmesan, parmigiano-reggiano cheese, grated
Directions

1Heat oil in a large nonstick skillet over medium-high heat.

2Add shallot and garlic, cook, stirring until fragrant, 30 seconds - 1 minute.

3Add spinach and cook, stirring, until wilted.

4Heat butter in a small saucepan over medium-high heat.

5Add flour and cook, stirring until smooth and bubbling, about 30 seconds.

6Add milk, nutmeg, salt & pepper, cook, whisking constantly until thick.

7Stir the spinach into the sauce.

8Stir in Parmesan cheese and serve.
