  • 1/4 cup shallots minced
  • 1 clove garlic minced
  • 1 large spinach stems removed
  • 1 tablespoon butter
  • 1 tablespoon flour, all-purpose
  • 1/2 cup milk, low-fat
  • 18 teaspoon nutmeg
  • 18 teaspoon salt
  • 18 teaspoon black pepper
  • 2 tablespoons parmesan, parmigiano-reggiano cheese, grated

Directions

    Heat oil in a large nonstick skillet over medium-high heat.

    Add shallot and garlic, cook, stirring until fragrant, 30 seconds - 1 minute.

    Add spinach and cook, stirring, until wilted.

    Heat butter in a small saucepan over medium-high heat.

    Add flour and cook, stirring until smooth and bubbling, about 30 seconds.
